Artisanak Stilton
A peculiarly flavored un-pressed
cheese made from milk with cream
added; So called from the village
or parish of Stilton, England,
where it was originally made.
Epoisses
A pungent un pasteurized cows milk
cheese. A washed-rind cheese it is
circular at around either 10cm or
18cm in diameter, with a distinctive
soft red-orange colour
Raclette
The cheeses are all cow's milk
have in common a creamy con-
sistency with easily melts but
does not get too runny. The
semifirmcheese is normally
aged about 3 or 4 months.
